Course Summary

This apprenticeship equips you with the skills and knowledge to prepare food and perform basic cooking tasks under a senior chef's supervision.

As a Commis Chef, you'll start in a junior culinary role, learning basic functions in all kitchen sections. You'll prepare and cook a variety of foods, including fish, shellfish, meat, poultry, vegetables, sauces, soups, rice, pasta, bread, pastry and desserts. This role helps you discover your culinary passion.

Course Details

A professional cookery apprentice is the most common starting position in many kitchens and in principle the most junior culinary role. The primary objective of an apprentice chef is to learn and understand how to carry out the basic functions in every section of the kitchen. This gives the opportunity to experience, consider and value every section with a view to choosing an area where you feel most inspired.

How will it be delivered and assessed?

E-portfolio and workplace observation. Guided learner hours are delivered during contracted working hours.

Entry requirements

You Should:

  • Hold 2 GCSE’s grade A – C or grade 9 – 3 including English and maths
  • You may have also achieved Level 1 Culinary Skills
  • You need to be employed within the catering industry or have an employer in this area willing to take you on as an apprentice

On completion of this pathway, learners may progress onto further qualifications specific to their work context.

Progression should not just be seen as vertical. In some instances, progressing into another role at the same level may be just as rewarding as it offers the opportunity to develop new skills and knowledge.
