Course Summary
This course will develop your practical skills in food preparation and cooking. Lessons take place in our industry-standard kitchens and bakery, plus the Open Kitchen, our commercial restaurant which is open to the public. You will run the afternoon service of the restaurant, working in the kitchen and front-of-house.
Course Details
In the kitchens, our chef lecturers will develop your skills in preparing and cooking meat, fish, poultry, vegetables, soups, stocks and sauces. Once you have mastered the basics, you will expand your skills to look at more complex dishes, for example cooking shellfish and offal. In our bakery, you will produce hot and cold desserts and create biscuits, cakes and sponge products.
You will develop your customer service and front-of-house skills working alongside our professional staff in the Open Kitchen.
Guest chefs will visit the College to perform demonstrations and you are encouraged to enter external competitions and cater for events. You will also work on live briefs designing specific products or menus.
How will it be delivered and assessed?
The course is continually assessed throughout the year with mixture of practical assessments and multi-choice questions.
Entry requirements
GCSE English and Maths at grade 3 or above or a Level 2 Certificate in Food Preparation and Cookery.
